Ingredients

  • 1 cup firmly packed brown sugar
  • ½ cup butter
  • 2 apples, cored and chopped
  • 1 cup golden raisins
  • ½ cup brandy
  • 5 cups cooked brown rice
  • 1 cup walnuts, chopped
  • 1½  teaspoons ground cinnamon
  • 1 pint vanilla ice cream

Directions

  • Combine brown sugar and butter in large skillet. Cook over medium heat until sugar is dissolved.
  • Stir in apples, raisins and brandy. Cook until apples are crisp-tender, stirring constantly.
  • Fold in rice, walnuts and cinnamon.
  • Serve topped with vanilla ice cream.
 

Recipe Notes

Medium or long grain white rice may be substituted.
