- Heat oil in a tilt skillet over medium-high heat. Add rice, garlic, carrots, scallions, broccolini, salt, and pepper. Cook over medium-high heat for 5 to 7 minutes or until rice is lightly browned. Transfer rice to a steam table and hold hot for service.
To make 1 portion:
Scoop 1 cup toasted rice onto a heated plate, and garnish with 2 grilled scallion bottoms.
Optional: Garnish with lemon wedges.
