Gingered Rice Shrimp Salad

Ingredients

  • 3 cups cooked medium grain rice
  • 2 cups frozen cooked shrimp, thawed, peeled, deveined
  • 1 cup snow peas, blanched
  • ½ cup green onions, thinly sliced
  • ½ cup red bell pepper, julienned
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • ¼ cup peanut oil
  • ¾ cup Asian-flavored dressing

Directions

  • Combine rice, shrimp, snow peas, green onion, bell pepper, salt and pepper in a large bowl. Add oil and toss until mixture is evenly coated. Drizzle dressing over salad and toss gently.

Recipe Notes

Blanch peas 1-2 min in large boiling pot of salted water. Drain and serve immediately, or if using later, transfer to bowl of ice water.
