Ingredients

  • ¼ cup Parmesan cheese
  • 3 tablespoons butter, softened
  • 2 tablespoons lemon juice
  • 1 tablespoon Dijon mustard
  • 1 teaspoon lemon zest
  • 1 ½ teaspoons anchovy paste
  • 1 clove garlic, minced
  • ⅛ teaspoon hot pepper sauce
  • 3 cups hot cooked rice
  • 1 pound sirloin steak, grilled and sliced
  • 1 cup spinach, finely chopped (plus more for serving)
  • ½ cup walnuts
  • ½ cup black olives, sliced
  • spinach or romaine lettuce

Directions

  • Combine cheese, butter, lemon juice, mustard, lemon zest, anchovy paste, garlic and hot pepper sauce in large bowl. Add rice, steak, spinach, walnuts and olives to cheese mixture. Serve over spinach or Romaine lettuce.
