  • Serving Size: 1 cup

Use this basic rice pudding recipe if you are starting with already cooked leftover rice.

Ingredients

  • 5 Each Eggs
  • 3 Each Eggs
  • 1 Cup Sugar
  • 1 Quart Milk
  • 2 Cups Cream
  • 1 Tablespoon Vanilla Extract
  • 1 Teaspoon Salt
  • 1 Quart Long Grain Or Parboiled Rice*
  • 1 Cup Raisins (or Other Dried Fruits)**
  • 1 1/2 Cup Whipped Topping
  • Cinnamon

Instructions

  1. In a large bowl whisk together eggs, yolks and sugar until smooth. Whisk in milk, cream, vanilla and salt. Stir in rice and raisins.
  2. To Serve: For each serving, scoop 1 cup warm or chilled pudding into a bowl and top with 2 Tbsp. whipped topping and a dusting of cinnamon, if desired.
