Use this basic rice pudding recipe if you are starting with already cooked leftover rice.
Ingredients
- 5 Each Eggs
- 3 Each Eggs
- 1 Cup Sugar
- 1 Quart Milk
- 2 Cups Cream
- 1 Tablespoon Vanilla Extract
- 1 Teaspoon Salt
- 1 Quart Long Grain Or Parboiled Rice*
- 1 Cup Raisins (or Other Dried Fruits)**
- 1 1/2 Cup Whipped Topping
- Cinnamon
Instructions
- In a large bowl whisk together eggs, yolks and sugar until smooth. Whisk in milk, cream, vanilla and salt. Stir in rice and raisins.
- To Serve: For each serving, scoop 1 cup warm or chilled pudding into a bowl and top with 2 Tbsp. whipped topping and a dusting of cinnamon, if desired.
