This interesting mix of East meets Southwest uses a beef-corn flour mix and rice with an accent of curry to give a unique twist to this tortilla filling.
- In a skillet cook ground beef over medium heat until browned completely. Drain off fat. To the meat add corn flour, oil, sugar and salt and continue to cook several minutes, stirring often. Remove from heat and reserve.
- In another large skillet heat oil; add onion and cook 5 minutes over medium-high heat, stirring often. Add cooked beef mixture along with curry paste and mix well; heat through. Keep warm.
- To Make Burritos: For each burrito, lay a tortilla out flat on a clean, dry surface. Top with 1/2 cup rice, 1/2 cup of curried beef mixture and 1 tablespoon cilantro. Wrap tortilla and roll up burrito style. Keep warm to serve.
