This twist on a classic incorporates a crust of rice, sausage, pepperoni, onion, garlic and seasonings, and is finished off with pizza sauce and cheeses. It's ideal for kids or patrons with an adventurous side!
- Preheat oven to 375 F. Spray two 20x12x3-inch hotel pans with non-stick spray. In bowl combine: onions, pepperoni, sausage, tomatoes, rice, garlic and oregano. Divide mixture evenly into bottoms of two pans. Pour stock evenly over mixture. Cover tightly with foil or lid. Bake 45-50 minutes or until liquid is absorbed and rice is tender and rice has reached a temperature of 165 F. or higher.
- Remove pan from heat and fluff rice mixture with fork. Gently smooth out top of rice mixture. Top with an even layer of pizza sauce and an equal layer of Mozzarella. Sprinkle tops evenly with Parmesan and continue to bake an additional 5-7 minutes or until cheese melts. Remove from heat and let stand at least 10 minutes before dishing up. Hold at 135 F. or higher. For Each Serving: - #6/6-oz. scoop melts. Serve as an entrée or side dish.
