This hearty chicken and rice based soup is easy to make and is chock full of goodness with lots of vegetables and thyme and finished with lime to bring out the flavors.
- In heavy pot heat oil over medium-high heat; add onion and sauté 3 minutes. Add carrots and celery and continue cooking 2 minutes.
- Add rice, bay leaves, pepper and thyme and sauté 2 minutes.
- Pour in stock, bring to a boil, stirring occasionally. Reduce heat and simmer, uncovered, 20 minutes.
- Stir in chicken cubes and simmer another 10 minutes. Remove bay leaves and add parsley and lime juice. Serve hot.
