Jeweled Seafood Rice

With seafood as the special twist, this fried brown rice is full of flavor from onions, peppers, garlic, celery, carrots, shrimp and bacon.

Ingredients

  • 2 tablespoons vegetable oil
  • 2 tablespoons olive oil
  • 2 cups yellow onion
  • 3 cups red and green bell pepper
  • 2 cups celery
  • 1½ cups baby carrots
  • 2 tablespoons garlic
  • 2 cups mini salad-shrimp
  • ½ cup cooked bacon
  • ¼ cup vegetable oil
  • 1½ quarts whole grain brown rice
  • 1 cup scallion

Directions

  • In large skillet, heat butter and oil over high heat; add onion and sauté 1 minute. Add peppers, celery, carrots and garlic and continue to cook 1 minute until vegetables begin to soften.
  • Add shrimp and bacon and sauté 1 minute. Remove from heat and keep warm. 
  • In another large skillet, heat oil over high heat; add rice and sauté 2 minutes to heat rice through. Add reserved vegetable mixture and continue to cook until heated through and well mixed. Adjust seasonings. Stir in scallion. Keep warm. Serve with grilled seafood or fish, chicken or pork.
