Kid-friendly (and not so bad for post-adolescents as well), this simple ooey-gooey casserole is a crowd pleaser. Serve it as a vegetarian entrée or as a side dish with meat or fish.
- Combine rice, sour cream, milk, salt, chiles and half the cheese; mix well. Portion into greased shallow hotel pans; top with remaining cheese and sprinkle with paprika. Bake at 350 F for 30 to 40 minutes until hot and bubbly.
