This continental dessert tastes like a fruit-laden rice pudding, but it's made just like risotto.
- Melt butter in a saucepan over medium heat. Add the rice and sauté for a few minutes; stir in salt and apple juice. Heat to a simmer; cover and simmer until rice is tender but still moist (about 30 minutes).
- Stir in cream and sugar and cook until the cream is absorbed and the pudding thickens (about 8 minutes).
- Stir in the orange zest, cranberries and pecans. Serve warm or chilled with additional whipped cream, if desired.
