This light, bright sandwich or hors d'oeuvre is made of rice, orange sections, carrots, Thai sweet chili sauce and shrimp wrapped up in a crisp lettuce wrapper.
- In pot with lid combine reserved mandarin juice and enough water to make 1 quart liquid. Bring liquid, 1 tablespoon oil and salt to a boil. Stir in rice, reduce heat, stir, cover and reduce heat to low. Cook, covered, for 18-20 minutes or until rice is tender and all liquid is absorbed. Remove from heat and let stand 10 minutes.
- Stir in orange sections and chili sauce and mix well.
- In a skillet heat remaining oil over medium heat; add shrimp and sauté 2-3 minutes until cooked through. Remove from heat. For each wrap, lay out a lettuce leaf and spoon 1/4 cup rice mixture into leaf and top with 1 tablespoon of carrots and 1-2 shrimp. Drizzle with additional chili sauce, if desired, and fold up into a packet. There should be 24 packets or wraps, 2 per person.
