Classic pork fried rice made with whole grain brown rice, mushrooms, scallions and soy sauce.
- In large skillet or rondo, heat oil over medium heat; add eggs and stir slightly to scramble, leaving large pieces. When cooked, cool and cut into 1/2-inch pieces. Reserve.
- In tilt fry pan or large rondo, heat oils over medium heat. Add pork and sauté or stir-fry until mushrooms are tender and pork is hot and cooked through.
- Add rice to pork mixture and heat through. Stir in soy sauce to mix. Fold in reserved egg just to mix. Toss lightly.
- To Serve: For every 1 cup serving of rice, mix in 2 tablespoons sliced scallion before serving.
