- Preheat oven to 350 degrees F. Saute onion in 1 tablespoon oil until golden.
- Stir in rice, apple, raisins, and 2 tablespoons fruit juice.
- Sprinkle turkey with salt and pepper.Stuff about 2 cups of rice mixture into neck flap; secure with metal skewer. Line baking pan with foil and spoon remaining stuffing in a mound in the center of foil. Place turkey, skin side up, over stuffing; crinkle foil up around stuffing.Stir remaining 1 tablespoon oil with remaining fruit juice. Brush 2 tablespoons of juice mixture onto turkey. Roast 2 hours until the internal temperature reaches 170 degrees F., basting every 15 minutes with juice mixture.
