Turkey, tomatoes, chilis, Cheddar cheese and rice are tossed together for a delicious filling for burritos.
- 2 Tablespoons Butter Or Vegetable Oil
- 1 Cup Yellow Onion
- 12 Ounces Cooked Turkey Breast
- 1 1/2 Cup Diced Tomatoes
- 1 Cup Diced Green Chilis
- 1 Teaspoon Cumin
- 1 Teaspoon Oregano
- 1 Teaspoon Garlic Powder
- 1/2 Cup Chicken Stock
- 3 Cups Whole Grain Brown Rice*
- 1 1/2 Cup Reduced-fat Cheddar Cheese
- 1/2 Teaspoon Salt
- 1/4 Teaspoon Red Pepper
In large pot, melt butter over medium heat. Add onion and cook until softened but not browned.
Add turkey, tomatoes, chilis and spices and mix well. Stir in stock and cook 10 minutes, stirring often.
Add rice and cook until almost all liquid is absorbed.
Stir in cheese and seasonings and mix well. Keep warm. Serve as a filling for burritos, approximately 1 cup per serving.
