- Heat sauce pot over medium-high heat. Add olive oil, garlic, onions, celery and carrots to pot and cook for one minute.
- Add rice and quinoa to sauce pan with vegetables and cook for 30 seconds, stirring often.
- Add vegetable broth to the sauce pot. Stir, cover and reduce heat to low. Cook for 25 minutes, or until all liquid has been absorbed.
- Remove from heat, add red and green peppers and season with salt.
